Since one of the most visited pages on the old website was the salsa recipe, I thought I would add it to this version of the website as well. This makes a very hot but good salsa.
Tomatoes. Fresh taste better, but you can also use canned. For this recipe, you’ll need about 3 cups of diced tomatoes. If you are using them from the can, you’ll need to drain off most of the juice. I buy the petite diced tomatoes.
Peppers. I use 7 or 8 habanero peppers. That’s a lot. I also use 8-10 serrano peppers. That’s a lot. Then three jalapeno peppers. Throw all these into a food processor and chop them up real good. (For the mild salsa, use one or two jalapenos and one or two serranos. If you like it hotter, add a habanero with the guts taken out.)
Onions. Get a red onion and a yellow onion and a thing of green onions. Red onions can get very big, so get one about the size of a tennis ball, maybe a hair bigger. You’ll want about half or it. As far as the yellow onion goes, about a third. Then add about half the bundle of green onions. Don’t chop them up yet.
Garlic. I use about a teaspoon of the pre-chopped garlic. Just put it in with the onions.
Cilantro. This is harder to measure. I use about half a cup of loose cilantro. A half a cup of chopped would be way too much. Just grap a small handful and throw it in with the onion mixture.
Lime. Peel a lime and throw it in.
Now you can turn on the food processor and chop things up.
Add this mixture to the tomatoes you’ve already chopped up. Then add about four tablespoons of vinegar–apple cider is best but any will work. This is just so it doesn’t spoil so quickly. If it is all going to be eaten in two days it doesn’t matter.
Now add salt two or more tablespoons of salt. You can add more or less, I kind of like a lot of salt in it.
There are two controversial ingredients in my salsa. The first is pepper. I add two teaspoons or so of standard black pepper. When I started doing this some people objected, others didn’t notice. I like it.
The other controversial ingredient is tomato sauce. I have taken to adding one 8-ounce can of tomato sauce. Some people like it; some don’t. I think it gives it a little better flavor, but some say it spoils the fresh taste. You’ll have to decide for yourself.
